Since its debut in 2012, the InterContinental Danang Sun Peninsula Resort has reshaped Vietnam’s dining landscape by combining the country’s culinary roots with international refinement. Now, as the resort enters a new chapter, it’s set to make waves once again with the arrival of top-tier chefs renowned for their culinary expertise and the opening of an eagerly awaited Japanese restaurant, positioning it as a key player in Asia’s gourmet scene.

At the heart of the resort’s gastronomic offering is La Maison 1888, an elegant colonial-inspired retreat perched on the hillside, gazing over the ocean. The restaurant, which earned its first Michelin star in 2024, is now helmed by Chef Christian Le Squer. A luminary of French haute cuisine, Chef Christian has maintained three Michelin stars for 22 years and was honoured as global “Chef of the Year” in 2023. His inventive and contemporary approach promises to take diners on a series of unique and exciting culinary adventures.

Working alongside Chef Christian is Florian Stein, the talented Chef de Cuisine who honed his skills at the acclaimed Le Chambard in France, and Jimmy Chang, the restaurant’s sommelier and Beverage Manager, whose expertise has earned the restaurant Wine Spectator’s “Award of Excellence” seven years in a row.

Bruno Bruesch, the newly appointed Director of Culinary, oversees the resort’s evolving culinary journey. With over three decades of experience across Europe, Asia, and North America, Chef Bruno brings a fresh perspective rooted in seasonality, sustainability, and respect for tradition. His vision extends to Citron, celebrating the flavours of Vietnam’s diverse regions with a modern twist and Barefoot. At this stylish beachside grill, guests can dine with their toes in the sand, enjoying a variety of grilled seafood and meats. Expect more surprises from Chef Bruno, including exclusive dining experiences and extraordinary gala events.

Another exciting addition is the arrival of Tingara, a new Japanese omakase, teppanyaki, and sushi restaurant opening later this year. This dramatic venue is set high in the resort’s jungle canopy, offering panoramic ocean views and a theatrical open kitchen. Designed by Bill Bensley, Tingara takes its name from the Okinawan word for the Milky Way.

The restaurant will be led by Michelin-starred Chef Junichi Yoshida, who hails from Okinawa. He will be supported by teppanyaki expert Tetsuhiko Isozaki and sushi master Tsuneyoshi Taira, who will prepare dishes featuring the finest seafood and premium Kuroge wagyu beef.
